Leafless Greek Salad á la Brett
For Father’s Day, here is my dad’s favorite summer salad recipe.
Mix together:

1 part chopped cucumber (about 1/4 inch cube)
1 part chopped tomato (about 1/2 inch cube)
1 part feta cheese (about 1/4 inch cube, swap for sharp cheddar if you like)
And top with the following to taste:

Olive oil
Red wine vinegar (Balsalmic is also good)
Seasoned salt (swap for any spice mix you like)
Ground pepper
Toss it up and serve!  Also great on leftover pasta for an impromtu pasta salad.
